This flavourful ragout is excellent served with boiled or mashed potatoes. For a
more substantial meal add diced, cooked chicken and serve over rice.
- Garlicky Italian Seasoning - 2 tbsp.
- butter - 2 tbsp.
- medium sized onion, diced - 1
- Diced carrot - 4 oz.
- Diced celery - 4 oz.
- Diced tomato (Roma or Plum) - 4 oz.
- Chopped mushroom - 4 oz.
- tomato paste - 1 tbsp.
- Vegetable stock -
- Salt & pepper to taste -
In large saucepan sweat vegetables in butter (about 5 minutes over medium heat).
Blend in Garlicky Italian Seasoning. Add enough stock to make ragout saucy.
Adjust seasoning and cook additional 3-4 minutes.
