Smokey Baked Potato – British Style

This British gastro-pub favourite is an easy one-dish main that is both comforting and
filling. Excellent served with garlic sausage to temper a cold winter’s night.
Ingredients:
- large russet potatoes, scrubbed - 2
- Drizzle of olive oil -
- baked beans in tomato sauce - ½ 14-oz can
- Cheese Sauce -
- unsalted butter - 1 tbsp
- all-purpose flour - 1 tbsp
- hot milk - ¾ cut
- prepared mustard - 1 tsp
- Smoked Garlic Seasoning - 1 tsp
- Pinch cayenne pepper -
- Dash of Worcestershire sauce -
- sharp old cheese, grated - ½ cup
- Salt and pepper to taste -
Instructions:
Preheat oven to 400°F. Poke potatoes several times with a fork, rub with oil,
sprinkle with salt and place directly on oven rack and bake 50-55 minutes or
until soft.
While potatoes bake, make cheese sauce. Melt butter in a small saucepan over
medium heat. Stir in flour and cook until bubbly, the pour in hot milk. Whisk in
mustard, Worcestershire, cayenne and Smokey Garlic Seasoning. Add
cheese, salt and pepper, lower heat to simmer and cook for 1 minute or until
sauce is smooth. Remove from heat, cover and set aside.
Heat beans. Slice tops off of potatoes and open up potatoes lengthwise, break
up the insides with a fork. Pour half the cheese sauce over each and top with
warmed baked beans.
