Serve this easy recipe as a topping for a simple fish dish with steamed rice.
- Olive Oil -
- fresh scallops, cleaned and dry - 8
- Peach Salsa & Garlic -
- Steamed rice -
- Balsamic Vinegar with Garlic -
Heat a non-stick skillet over medium heat. Coat the bottom of the skillet lightly with olive oil. Place the scallops in the skillet and cook on each side for 2-3 minutes until opaque. Season to taste with salt and pepper. Make a bed of rice on each plate, serve scallops over rice and top with about 1 tbsp of Peach Salsa with Garlic.Optional, drizzle with Balsamic Vinegar with Garlic.
