At only 106 calories per serving, this vegetable dish is tasty enough to warrant two helpings.
- olive oil - 1 tbsp
- kale, rib removed and coarsely chopped - 1 lb
- water - 2/3 cup
- granny smith apples, sliced - 2
- Apple Cider & Garlic Vinaigrette - 2 tbsp
- whole grain mustard - 4 tsp
- brown sugar - 2 tsp
- Salt to taste -
Heat oil in heavy bottom pan over medium heat. Add kale and cook tossing to coat with oil until bright green – about 1 minute. Add water, cover and cook approximately 3-4 minutes. Stir in apples, cover and cook, stirring occasionally
until the kale is tender, about 10 minutes.
While kale is cooking, whisk the Apple Cider & Garlic Vinaigrette, mustard,
brown sugar and salt to taste. Add the mixture to the kale and cook uncovered
until most of the liquid is evaporated, about 3-4 minutes.
