Grilled Chicken and Roasted Red Pepper Pizza with Feta and Garlic Balsamic Glaze

This pizza reads like a chicken dinner; light and satisfying. Don't omit the drizzle it transforms the entire dish into a Mediterranean delight.

Ingredients:
- Fresh Frozen Ontario Garlic Cloves - 1 clove chopped
- Lemon - 1/2 juice and zest
- Olive oil - 2 tbsp
- Oregano - 1/2 tsp
- Salt - 1/4 tsp
- Pepper - 1/4 tsp
- Chicken breast - 1/2 pounded thin
- For Balsamic Drizzle
- Garlic Balsamic Vinegar - 1/2 cup
- Brown Sugar - 1 tbsp
- For The Pizza
- Pizza Dough - 1
- Olive oil - 2 tbsp
- Oregano - 1/2 tsp
- Mozzarella or Kasseri - 1 cup
- Feta Cheese - 1/2 cup
- roasted red pepper - 1 roasted and sliced
- Black or green olives - Optional
Instructions:
For The Chicken:
Mix olive oil, lemon juice, garlic, oregano, salt and pepper for marinade. Put in ziplock bag with chicken for at least 30 minutes or over night in refrigerator.
If roasting your own red pepper; cut in half, lightly oil and place on cookie sheet under the broiler in the oven until charred. Place in bowl and cover with saran wrap to sweat off the skins before slicing.
Remove chicken from marinade and grill over medium-high heat until cooked, about 5 min. each side. Set aside to rest before shredding by hand for pizza topping.
For Balsamic Drizzle:
Bring the balsamic vinegar and brown sugar to a gentle boil, reduce the heat and simmer until reduced by half and thickened, about 10-15 min.
For The Pizza:
Shape the pizza dough into the desired form on a baking sheet, brush with the mixture of the olive oil, garlic and oregano, sprinkle on the cheeses, chicken and roasted red peppers.
Bake in a preheated 500F/260C oven until the cheese has melted and the crust is crispy and golden brown, about 10-15 minutes (depending on the thickness of the crust).
Remove pizza from oven and drizzle the balsamic reduction over the pizza .
Optional: Dip your pizza wedge into a Tahini style dipping sauce while eating.
Note: Keep any leftover Garlic Balsamic reduction as a meat or vegetable glaze stored in the fridge.
