Dried figs, red onion and roasted walnuts give this salad plenty of flavour and
texture. The dressing is a bonus of nutrients.
- Apple Cider & Garlic Vinaigrette - ½ c
- honey - 1 tbsp
- Dijon mustard - 1 ½ tsp
- walnut pieces - ¼ cup
- dried figs, cut into eights - 12
- spinach - 8 cups
- sliced red onion - ½ cup
- crumbled feta cheese - ¼ cup
Preheat oven to 350°F (150°C)
Place walnut pieces on a baking sheet and bake for 6-8 minutes or until nuts are golden brown and fragrant. Remove from heat and cool.
In a large salad bowl, toss figs, spinach (clean, dried and torn), onion, feta cheese and roasted walnuts.
In a small bowl, whisk together the dressing ingredients.
Drizzle salad with dressing and serve immediately.
