- zucchini - 1
- red pepper - 1
- large onion - 1
- Fresh mushrooms -
- cherry or grape tomatoes - 1 small container
- Roasted Garlic Oil with Garlic Scapes -
- Balsamic Vinegar with Garlic -
- Salt and pepper - to taste
- Angel Hair Pasta - 1 small box
Coarsely chop all the vegetables into bite sized chunks, setting the tomatoes aside for now.
Drizzle with the Roasted Garlic Oil with Garlic Scapes and stir to combine in a large shallow pan (a roasting pan works too).
Sprinkle with salt and pepper if you wish and roast in a 400 degree oven till the veggies are soft and the mushrooms are "dry" for approximately 1 hour.
Stir periodically while they're roasting, adding the grape tomatoes about 15 minutes prior to serving.
Remove from oven and drizzle with the Balsamic Vinegar with Garlic, tossing carefully.
Toss over angel hair pasta and serve with some freshly grated parmesan cheese.
