40 Frozen Cloves Chicken

Ingredients:
- large free range chicken - 1
- brown rice - 500g
- white wine - 1 glass
- Chopped parsley, thyme and a whole bay leaf -
- carrots rough chopped - 2
- yellow onion chopped - 1
- bacon, chopped - 2 slices
- Zest of 2 lemons -
- frozen whole garlic cloves, rinsed and patted dry - 20 - 40
- Salt and pepper to taste -
Instructions:
Pre-heat the oven to 180C.
Pour rice into a large casserole and stir in parsley, onions, carrots, bacon and lemon zest. Place the chicken on top and top with the garlic cloves, thyme and bay leaf. Season well. Squeeze the lemon juice on top of the bird and stuff then empty lemon shells inside the cavity. Pour the wine into the pot and fill with water to about 2 cm up sides.
Cover with a lid and bake in oven 1 ½ hours. Remove lid for last ½ hour to brown chicken.
