Serve hot or cold
- Yukon Gold or Russet potatoes - 2 lbs
- Hot Garlic Mashed Potato Seasoning (or to taste) - 1.5 tbsp.
- fresh lime - 1/2
- olive oil - 3 tbsp.
- fresh chopped cilantro - 1 tbsp.
- salt & pepper to taste -
Scrub potatoes clean (skin on), cube into large pieces and boil until just tender.
Drain, leaving potatoes in pot. Add Hot Garlic Mashed Potato Seasoning & toss
to coat potatoes. Let sit about 5 min. Squeeze in lime juice, oil, cilantro and lightly
toss to coat. Adjust seasoning with salt and pepper.
