Roasted Garlic Paste

"Excellent as a spread for a fresh baguette, in pasta, potatoes, sauces or for meat and fish."
Ingredients:
- Frozen/Fresh Ontario Garlic - 4 large heads (bulbs)
- Extra-virgin olive oil - 4 tbsp.
- Water - 4 tsp
- Unsalted Butter - 3 tbsp. - room temperature
- Kosher salt and pepper - to taste
- Tabasco Sauce - 2-3 drops
Instructions:
Preheat oven to 325F. Slice off tops of garlic heads. (If using frozen cloves, place frozen cloves in foil and drizzle with oil and 1tsp of water. Close tightly and follow recipe.)
Gently remove lose papery outer skin from sides of heads.
Place in oven proof dish just large enough to hold bulbs (or wrap in foil). Drizzle with oil and water.
Cover tightly and bake 1 hour.
Uncover and baste with pan juices.
Continue baking another 15 minutes without a lid, until golden brown.
Remove from heat.
Cool garlic.
Squeeze flesh from cloves into a shallow bowl. Add remaining pan juices, butter, tabasco, salt and pepper to taste.
