Pepper-Crusted Salmon with Smoked Garlic

Use a good quality pepper mill to coarsely grind the fresh pepper.
Ingredients:
- maple syrup - 2 tbsp
- sodium-reduced soy sauce - 2 tbsp
- Smoked Garlic Seasoning - 1/8 c
- fresh coarsely ground pepper - 1/8 c
- canola oil - 2 tsp
- salmon fillets (4 oz. each) - 4
Instructions:
In a shallow dish, combine maple syrup and soy sauce. Place salmon fillets
skin-side up in marinade. Cover and refrigerate for 2-3 hours.
Place mixed ground pepper and Smoked Garlic Seasoning on a large plate.
Remove salmon from marinade and firmly press each fillet in blend.
Meanwhile, heat oil in a skillet over high heat. Place salmon skin-side up in
pan, reduce heat to medium and cook 4-5 minutes per side or until fish flakes
easily when tested with a fork.
