Mango and Garlic Chicken Satay Salad with Avocado – Garlic & Mango Dressing

Ingredients:
- chicken boneless breasts - 1
- fresh mango, peeled and sliced - 1
- fresh avocado, peeled and sliced - 1
- green onions, sliced on diagonal - 2
- spinach or mixed greens - 4 cups
- Sweet red peppers sliced (optional) -
- Fresh diced cilantro (for garnish) -
- Wooden skewers (about 12) -
- Marinade (for chicken):
- Garlic Mango Salad Dressing - ¼ c
- Terryiaki Ginger Sauce (may substitute with soy sauce) - ¼ c
- fresh grated ginger - 1 tsp
- soy sauce - 1 tbsp
- fresh squeezed lime juice (reserve rest of fresh lime for dressing) - 1 tsp
- Dressing:
- Garlic Mango Salad Dressing - 1/4 cup
- fresh squeezed lime - 1(less about 1 tsp)
- fresh grated ginger - 1 tsp
- chilli flakes (optional) or splash of Tabasco sauce - ¼ tsp
Instructions:
1) Mix marinade ingredients in a small bowl. Slice chicken breasts into strips for skewering onto a wooden pick. Add strips to marinade for minimum 2 hours or overnight.
2) Preheat oven to 325F. Skewer chicken strips on a stick. Will make about 12 sticks. Place on cookie sheet and bake 7-10 minutes. Turn sticks over and bake an additional 7-10 minutes (watch closely to not overcook).
3) Mix salad dressing while chicken is cooking. Set aside.
4) Plate salad with spinach, mango, avocado and green onion. Top each salad with 3 cooked chicken skewers (leave on stick). Drizzle with dressing and garnish with cilantro.
Optional: The chicken satays can be bread in Smokey Garlic Seasoning after skewering and prior to baking for added kick to your salad. SERVES 4
