This potato salad makeover will make you forget all others. Potatoes and Garlic,
both known as nature's versatile food, are low in fat and contain Vitamin C and
potassium. Garlic has more than 40 different sulphur compounds. Delicious
served with your favourite BBQ meat.
- small red new potatoes - 1 lb.
- small new white potatoes - 1 lb.
- extra virgin olive oil - 3 tbsp.
- Garlic Mashed Potato Seasoning - 1 - 2 tbsp.
- Dijon mustard - 1 tbsp.
- mayonnaise - 1/4 - 1/2 cup
- Grated rind of half a lemon -
Soak Garlic Mashed Potato Seasoning in 3 tbsp. olive oil, mustard, mayonnaise
& lemon. Set aside to rehydrate.
Scrub potatoes clean but leave the skin on. Place in pan, cover with cold water,
bring to a boil, reduce heat and simmer 10 minutes. Drain.
In a medium bowl toss potatoes with 3 tbsp. oil to coat well. Place in grill basket
and grill 15-20 minutes over medium heat to lightly brown, turning frequently.
(May also roast potatoes on shallow baking sheet in 400 degree F. oven.)
Toss with seasoned oil. Season to taste with salt and pepper. Toss again.
Excellent served warm or cold with fish
